  • 2 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups granulated sugar
  • 2 ounces cream cheese (room temperature)
  • 7 tablespoons unsalted butter (melted)
  • 1/4 cup fruit juice or broth (as bourbon substitute)
  • 1 large egg
  • 1 1/2 teaspoons pure vanilla extract
  • 8 ounces toffee chips
  • 1/2 cup pecan pieces (chopped small)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat cream cheese and sugar until smooth. Add melted butter, fruit juice/broth, egg, and vanilla; mix well.
  4. Gradually add dry ingredients until just combined. Fold in toffee chips and chopped pecans.
  5. Cover and chill dough for at least two hours.
  6. Scoop dough onto prepared sheets, about two inches apart. Bake for 12-15 minutes until golden around the edges.
  7. Cool on baking sheets for one minute before transferring to wire racks.
