  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 3 tbsp butter
  • Fresh parsley for garnish (optional)

Instructions

  1. Sauté the diced onion in a large skillet with 1 tablespoon of butter over medium heat for about 3–4 minutes until softened.
  2. Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain any excess fat.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Mix in the uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 18–20 minutes until the rice is tender.
  6. In a separate saucepan, melt the remaining butter on low heat and stir in Parmesan cheese, cheddar cheese, and milk until smooth.
  7. Once the rice is cooked, pour the cheese sauce into the skillet and stir to combine all ingredients evenly.
  8. Allow to cook uncovered for another couple of minutes before serving warm with chopped parsley on top if desired.
