  • ¾ cup brown sugar
  • 3 large eggs

  • ¼ teaspoon nutmeg
  • ½ cup chopped pecans (optional)
  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup heavy cream
  • ¼ cup barley tea
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine cubed bread and set aside.
  3. In another bowl, whisk together milk, heavy cream, brown sugar, eggs, vanilla extract, cinnamon, and nutmeg. Pour over the bread cubes and let sit for about 10 minutes to absorb.
  4. If using pecans, stir them in before transferring everything into the prepared baking dish.
  5. Bake for 45-50 minutes until golden brown and set in the center.
  6. For the caramel sauce: melt butter in a saucepan over medium heat; add brown sugar until smooth. Gradually stir in heavy cream followed by barley tea, vanilla extract, and salt. Cook until thickened (3-5 minutes).
  7. Drizzle warm caramel sauce over baked pudding before serving.
