  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter cold (cut into cubes)
  • 110 g water
  • 1 kg apples (Pink Lady, Royal Gala or Fuji)
  • 75 g unsalted butter
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (or other type of finely ground nuts or breadcrumbs)
  • 1 egg
  • 1 tbsp water
  • 3 tbsp brown sugar
  • Vanilla Ice Cream or other flavor you prefer

Instructions

  1. Prepare the Dough: In a large bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Refrigerate for at least 30 minutes.
  2. Make the Filling: Peel and slice apples. In a saucepan over medium heat, melt butter and add apples, brown sugar, cinnamon, cornstarch, salt, and water. Cook until bubbly.
  3. Roll Out & Assemble: Roll out chilled dough on floured surface to 1/8 inch thick. Place in pie dish, fill with apple mixture, and top with additional rolled dough or sprinkle with almond flour.
  4. Bake: Preheat oven to 375°F (190°C). Bake for about 80 minutes until golden brown. Let cool before serving.
  5. Serve à la Mode: Slice warm pie and serve with a scoop of vanilla ice cream.
