  • 1 cup brown sugar (for filling)
  • ¼ cup heavy cream (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy.
  4. Add eggs one at a time along with apple cider and vanilla; mix well.
  5. Gradually blend dry ingredients into wet mixture until just combined.
  6. Scoop rounded balls of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes until edges are golden.
  8. For the filling, melt butter in a saucepan; stir in brown sugar and heavy cream until boiling gently for about 3-5 minutes. Remove from heat and add vanilla.
  9. Once cookies are cool, spread caramel on one cookie and sandwich with another.
