  • 2 cups flour
  • 1 tablespoon apple pie spice

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for topping)
  • ½ cup sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Reduce apple cider by simmering in a saucepan over medium heat until halved (20-30 minutes).
  2. Preheat oven to 350°F and grease a 9×5 loaf pan.
  3. Cream together butter and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla until combined.
  5. Mix together flour, apple pie spice, baking powder, baking soda, and salt; then blend into the wet mixture along with reduced cider until just combined.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a tester comes out clean.
  7. Allow to cool for 15 minutes in the pan before transferring to a rack.
  8. Brush with melted butter and sprinkle with cinnamon sugar once slightly cooled.
